STEP 1

Start with your preferred brewing method—whether it's a AeroPress, pour-over, or trusty espresso machine. Each method brings out unique flavour notes from our beans, so pick one that suits your style. Make sure your gear is clean and your grinder is dialled in. Freshly ground beans always deliver the best taste, so aim to grind right before brewing. For most methods, a medium grind is your go-to (think the texture of sea salt).

STEP 2

Measure out 15g of coffee for every 250ml of water—it’s the golden ratio for a balanced brew. Use filtered water heated to around 92–96°C for the cleanest extraction. Too hot and you’ll burn the beans, too cold and you’ll miss the magic. Bloom your coffee first (especially with pour-over)—this means pouring a little hot water over the grounds and waiting 30 seconds to release trapped gases. Then, pour slowly and evenly for a smooth, even brew.

STEP 3

Once your coffee’s brewed, give it a moment to cool slightly—flavour opens up as the temperature drops. Take that first sip and pay attention to what you taste: is it bold, smooth, sweet, or nutty? Not quite right? Tweak your grind size, ratio, or brew time next round. Brewing is part science, part ritual—don’t be afraid to experiment. Most importantly, enjoy the process—because great coffee is meant to be savoured, not rushed.
